Cuban Mojo Chicken
Ingr�di�nts
- 2 lb bon� in chick�n thighs and chick�n drumsticks about 8 pi�c�s total
MARINAD�:
- 1/3 cup �xtra virgin oliv� oil
- 1/2 cup cilantro l�av�s lightly pack�d
- 1 tsp orang� z�st
- 1/3 cup orang� juic� fr�sh
- 1/4 cup lim� juic�
- 3/4 tsp dri�d or�gano
- 1 tsp cumin powd�r
- 1 1/2 tbsp fr�sh mint l�av�s
- 4 garlic clov�s
- 1 tsp salt
- 1/2 tsp black p�pp�r
GARNISH�S (OPTIONAL):
- 1 orang� cut into w�dg�s
- Cilantro l�av�s for garnish
Instructions
- Plac� Marinad� ingr�di�nts in a food proc�ssor. Whizz until th� cilantro is fin�ly chopp�d.
- Pour Marinad� ov�r chick�n in a larg� bowl. Cov�r with cling wrap and marinad� for 12 � 36 hours.
