Grilled vegetables are my go to side dish for any summer barbecue. They are incredibly easy to prepare, go with just about anything, and can be made in advance. While most people grill zucchini, peppers and onions, my absolute favourite vegetable to grill is eggplant. 

Ingredients

  • 2 eggplants
  • 2 tsp salt
  • 1/2 cup extra virgin olive oil
  • 3 cloves garlic crushed
  • 2 tbsp chopped fresh parsley
  • 2 tbsp chopped fresh oregano
  • 1/2 tsp pepper
  • 1/2 tsp salt


Instructions

  1. Cut the eggplant into 1/4 inch thick slices and generously salt each slice. Let them rest for about 15 minutes so that the salt can draw out the moisture and bitterness. Wipe each of the slices with a paper towel to remove the salt and moisture. 
  2. Preheat the barbecue to medium heat
  3. In a large dish combine the olive oil, garlic, parsley, oregano, salt and pepper. Place each of the eggplant slices in the dish, flipping them over to ensure both sides are covered in oil. 
  4. Grill for approximately 6 minutes per side until golden in colour with grill marks. If the eggplant slices become dry and stick to the grill, brush them with more oil. 
  5. Once the eggplant is tender and cooked. Remove from the grill and return back to oil, herb and garlic mixture in the pan. Flip once so that both sides are coated before transferring to a serving platter. Spoon any of the excess herbs & garlic overtop before serving. The eggplant can be enjoyed hot or at room temperature and will last for up to 4 days in the fridge.

These Garlic Brown Sugar Pork Chops are such a delicious blend of flavors, and is sure to be a new family favorite!



INGREDIENTS

  • 2 Bone in thick pork chops, about 1 inch thick
  • 3 tablespoons garlic minced
  • 2 tablespoons vegetable oil
  • 4 tablespoons butter
  • 1/2 teaspoon red pepper flakes
  • 3 tablespoons brown sugar
  • salt and pepper
  • fresh parsley chopped

INSTRUCTIONS

  1. Preheat oven to 400 degrees. Season pork chops with salt and pepper.
  2. Heat vegetable oil in a oven safe skillet (I use cast iron) on medium high heat. Sear the pork chops for 3 minutes on each side. Remove and set aside
  3. In the same skillet reduce heat to low and add butter, garlic, brown sugar, red pepper, and whisk until combined, simmer 2-3 minutes. Add pork chops back into the pan and coat with sauce.
  4. Place oven safe skillet in the oven and bake 8-10 minutes or until internal temperature of pork chops reaches 145F
  5. Remove pork chops and let rest 5 minutes. Garnish with fresh chopped parsley and serve!

NOTES

  • If your using a thinner pork chop just cut back on the cooking time a minute or two.

Garlic Butter Herb Steak Bites with Potatoes are such a simple meal that is full of tender garlic herb melt in your mouth steak with potatoes.  This is a meal that the entire family will love! 



Ingredients

  • 1 tablespoon olive oil
  • 2 tablespoons butter divided
  • 1 pound yukon gold potatoes sliced about 1/2 inch in thickness
  • 3 garlic cloves minced
  • 1 teaspoon thyme chopped
  • 1 teaspoon rosemary chopped
  • 1 teaspoon oregano chopped
  • 1 1/4 pounds sirloin steaks cut into 1 inch cubes
  • salt and pepper

Instructions


  1. Heat a large cast iron skillet over medium high heat and add olive oil and butter, potatoes, garlic, thyme, rosemary, and oregano. Cook for about 3 minutes, stir and cook and additional 3 minutes until fork tender. Remove and set aside on a plate.
  2. Turn the skillet to high heat. Add the 1 tablespoon butter and steak bites. Let the steak sear for a minute and then continue to stir the steak until they are golden brown.
  3. Top the steak with fresh chopped herbs.

Honey garlic butter shrimp is quick and easy and a guaranteed hit!

INGREDIENTS

  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 1 teaspoon fresh grated ginger
  • 2 tablespoons minced garlic
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon cornstarch
  • 1 pound large shrimp, peeled, deveined and tails removed if desired
  • 2 tablespoon butter
  • 2 cups chopped broccoli
  • 1 teaspoon olive oil
  • salt pepper


INSTRUCTIONS

  1. In a small bowl add the honey, soy sauce, ginger, garlic, red pepper and mix until combined.
  2. Place the peeled and deveined shrimp into a bowl and add 1/3 of the sauce. Toss and marinade 30 minutes.
  3. Whisk in the cornstarch to the reserved marinade and set aside.
  4. Heat a cast iron skillet or wok on high heat, add olive oil and broccoli, salt and pepper and cook 5-6 minutes just until soft. Remove from pan and set aside.
  5. Add the butter to the skillet and add shrimp discarding and marinade. Cook until the shrimp turns pink about 2 minutes each side.
  6. Add in the reserved sauce and bring to a simmer. Add in the broccoli and toss until heated through.
  7. Serve with white rice or pasta.

  4. Remove from oven and let it rest with foil for at least 20 minutes. The temperature will rise to 130 degrees for a medium rare prime rib.
