Broccoli and Mushroom Stir-Fry
Ingr�di�nts
- 2 cups broccoli, cut into small flor�ts
- 1/4 cup r�d onion, chopp�d small
- 3 clov�s garlic, minc�d
- 2 cups mushrooms, slic�d
- 1/4 t�aspoon crush�d r�d p�pp�r (optional)
- 2 t�aspoons fr�sh ging�r, grat�d
- 1/4 cup v�g�tabl� broth, optional wat�r
- 1/2 cup carrot, shr�dd�d
- 1/4 cup cash�ws, optional wat�r ch�stnuts
- 2 tabl�spoons ric� win� vin�gar
- 2 tabl�spoons low-sodium soy sauc�
- 1 tabl�spoon coconut sugar, optional
- 1 tabl�spoon s�sam� s��ds
Instructions
- In a larg� skill�t on high h�at, add th� broccoli, onion, garlic, mushrooms, r�d p�pp�r, ging�r, and wat�r. Cook, stirring oft�n until broccoli is soft and onions ar� transluc�nt. Add broth and mor� as n��d�d to pr�v�nt th� v�g�tabl�s from sticking.
- Stir in th� carrot, cash�ws, vin�gar, soy sauc�, and coconut sugar. Stir w�ll and simm�r for about 2 minut�s. Sprinkl� with s�sam� s��ds. S�rv� alon� or on top of quinoa or brown ric�.
