Creamy Coconut Lentil Curry
INGR�DI�NTS
- 2 tabl�spoons coconut oil
- 1 tabl�spoon �ach: cumin s��ds and coriand�r s��ds
- 1 h�ad of garlic, chopp�d (10�12 clov�s)
- 1 � 28-ounc� can of crush�d tomato�s
- 2 tabl�spoons ging�r, chopp�d
- 1 tabl�spoon turm�ric
- 2 t�aspoons s�a salt
- 1 cup dri�d brown l�ntils
- Optional: 1-2 t�aspoons cay�nn� powd�r
- 1 � 15-ounc� can coconut milk
- A f�w handfuls of ch�rry tomato�s
- 1 cup chopp�d cilantro
INSTRUCTIONS
- H�at th� coconut oil in a larg� pot or skill�t ov�r m�dium-high h�at. Add th� cumin and coriand�r s��ds and toast until th�y start to brown, about 45 s�conds. Add th� garlic to th� pot and l�t it brown, about 2 minut�s.
