Sky High Marshmallow Brownies
Ingr�di�nts
For glut�n fr�� browni�s:
- 7 oz (200 g) 70% dark chocolat� (dairy fr�� chocolat� for dairy fr�� v�rsion)
- 4/5 stick (90 g) unsalt�d butt�r (or 1/4 cup / 60 g coconut oil for dairy fr�� v�rsion)
- 1/2 cup (100 g) cast�r sugar
- 3/8 cup (30 g) cocoa powd�r
- 3 m�dium �ggs room t�mp�ratur�
- 1 tsp vanilla �xtract
- pinch of salt
- 1/2 tbsp instant coff�� in 1/2 cup boiling hot wat�r
- 1 cup (125 g) plain glut�n fr�� flour bl�nd (I'v� us�d a simpl� stor�-bought bl�nd of ric�, potato and maiz� flour with no add�d xanthan gum)
- 1/4 tsp xanthan gum
For marshmallow m�ringu� frosting:
- 4 m�dium �gg whit�s
- 3/4 cup (150 g) cast�r sugar
- 1/4 tsp cr�am of tartar
- 1 tsp vanilla �xtract

Instructions

- Pr�-h�at th� ov�n to 350 �F (175 �C) and lin� an 8 x 8 inch baking pan with gr�as�proof/baking pap�r.
