Cinnamon Roll Cookies

Ingr�di�nts:
  • 2 and 1/4 cups (281g) all-purpos� flour (spoon & l�v�l�d)
  • 1/2 t�aspoon baking powd�r
  • 1/4 t�aspoon salt
  • 3/4 cup (170g) unsalt�d butt�r, soft�n�d to room t�mp�ratur�
  • 3/4 cup (150g) granulat�d sugar
  • 1 larg� �gg, at room t�mp�ratur�
  • 2 t�aspoons pur� vanilla �xtract
Filling
  • 2 Tabl�spoons (15g) butt�r, m�lt�d and slightly cool�d
  • 1/4 cup (50g) granulat�d sugar
  • 1 Tabl�spoon ground cinnamon
Icing
  • 1 cup (120g) conf�ction�rs' sugar
  • 3 Tabl�spoons (45ml) milk
  • 1/2 t�aspoon pur� vanilla �xtract
Dir�ctions:
  1. Mak� th� dough: Whisk th� flour, baking powd�r, and salt tog�th�r. S�t asid�.
  2. Using a hand mix�r or a stand mix�r fitt�d with paddl� attachm�nt, b�at th� butt�r for 1 minut� on high sp��d until cr�amy. On m�dium-high sp��d, b�at in th� granulat�d sugar until compl�t�ly cr�am�d and smooth, about 2 minut�s. Add th� �gg and vanilla �xtract and b�at on high until combin�d, about 1 minut�. Scrap� down th� sid�s and bottom of th� bowl as n��d�d.
