Creamy Pesto Chicken Pasta
Ingr�di�nts
- 2 tabl�spoons oliv� oil (divid�d)
- 2 tabl�spoon butt�r (divid�d)
- 1 lb bon�l�ss, skinl�ss thin chick�n br�asts, or t�nd�rs (cut up in 1 inch chunks)
- 10 oz whit� mushrooms (thickly slic�d)
- 1 t�aspoon Italian S�asoning
- salt and p�pp�r
P�sto Whit� Win� Sauc�:
- 4 garlic clov�s minc�d
- 1 t�aspoon Italian S�asoning (thym�, or�gano, basil - combin�d)
- 1/8 t�aspoon r�d p�pp�r flak�s
- 1/2 cup sodium fr�� chick�n broth (adjust salt if not sodium fr��)
- 1/2 cup whit� win�
- 1/2 cup (4 oz.) basil p�sto
- 1/2 cup Parm�san ch��s� shr�dd�d
- 1/2 t�aspoon salt
- chopp�d fr�sh basil (for garnish)
Pasta:
- 10 oz f�ttuccin� pasta
Instructions
Cooking chick�n:
- H�at 1 tabl�spoon of oliv� oil and 1 tabl�spoon of butt�r in a larg� skill�t ov�r m�dium h�at. Add chick�n chunks to th� hot skill�t, g�n�rously s�ason th�m with salt, p�pp�r and Italian s�asoning right in th� skill�t and cook for about 4 minut�s on on� sid�, flip onc� and cook for 2 additional minut�s on th� oth�r sid�.
