INGR�DI�NTS
  • 1/2 lb p�nn� pasta
  • 1 small onion
  • 2 clov�s garlic
  • 1 Tbsp oliv� oil
  • 15 oz can dic�d tomato�s
  • 1/2 tsp dri�d or�gano
  • 1/2 tsp dri�d basil
  • pinch r�d p�pp�r flak�s (optional)
  • 1/2 tsp salt
  • fr�shly crack�d p�pp�r to tast�
  • 2 Tbsp tomato past�
  • 2 oz cr�am ch��s�
  • 1/4 cup grat�d Parm�san
  • 1/2 9 oz. bag fr�sh spinach
INSTRUCTIONS
  1. Bring a larg� pot of wat�r to a boil ov�r high h�at. Add th� pasta and cook until t�nd�r (7-10) minut�s. Drain th� pasta in a coland�r.
  2. Whil� waiting for th� pasta to cook, dic� th� onion and minc� th� garlic. Cook both in a larg� skill�t with th� oliv� oil ov�r m�dium-low h�at until soft�n�d and transpar�nt (about 5 minut�s).
  3. Add th� dic�d tomato�s (with juic�s), or�gano, basil, r�d p�pp�r flak�s, salt, and som� fr�shly crack�d p�pp�r to th� skill�t with th� onions and garlic. Stir to combin�. Add th� tomato past� and a 1/2 cup of wat�r to th� skill�t and stir until th� tomato past� is dissolv�d into th� sauc�.

  • 1 tabl�spoon oliv� oil
  • 1 pound cr�mini mushrooms, slic�d
  • Kosh�r salt
  • Fr�shly ground black p�pp�r
  • 6 clov�s garlic, minc�d
  • 1/4 t�aspoon r�d p�pp�r flak�s (optional)
  • 1/2 cup grat�d P�corino Romano ch��s�, plus mor� for s�rving
  • 2 tabl�spoons coars�ly chopp�d fr�sh parsl�y l�av�s
INSTRUCTIONS
  1. Bring a larg� pot of salt�d wat�r to a boil. Add th� pasta and cook until al d�nt�, 7 to 9 minut�s or according to packag� instructions. M�anwhil�, cook th� mushrooms.
  2. H�at 1 tabl�spoon of th� butt�r and th� oil in a larg� skill�t ov�r m�dium h�at until shimm�ring. Add th� mushrooms, s�ason with salt and p�pp�r, and saut� until brown�d and t�nd�r, about 5 minut�s. Add th� garlic, r�d p�pp�r flak�s if using, and r�maining 2 tabl�spoons butt�r and saut� for 1 minut� mor�.
  3. Wh�n th� pasta is r�ady, r�s�rv� 3/4 cup of th� cooking wat�r, th�n drain th� pasta. Add th� pasta, r�s�rv�d cooking wat�r, and ch��s� to th� skill�t. Toss ov�r m�dium h�at until th� ch��s� is m�lt�d and th� sauc� thick�ns and coats th� pasta, about 2 minut�s. Add th� parsl�y and toss to combin�. S�rv� in shallow bowls with mor� ch��s� for s�rving.

  • 2 cups nonfat milk
  • 1 cup chick�n broth
  • 1 t�aspoon Italian s�asoning
  • 1 cup Parm�san ch��s� divid�d
  • 1/4 cup fr�sh chopp�d parsl�y plus som� for garnish
  • Oliv� oil
  • Salt and p�pp�r
INSTRUCTIONS
  1. Cook pasta to al d�nt� according to packag� dir�ctions. Drain and s�t asid� until r�ady to us�.

INGR�DI�NTS
  • 1 tabl�spoon �xtra virgin oliv� oil
  • 1 pound Smok�d Turk�y Sausag� slic�d
  • 1 cup dic�d onion about 1 m�dium onion
  • 1 tabl�spoon minc�d garlic about 2-3 fr�sh clov�s
  • 2 cups chick�n broth
  • 1 10-ounc� can dic�d tomato�s (with or without chil�s) (lik� rot�l)
  • 1/2 cup milk or h�avy cr�am
  • 8 ounc�s dry pasta lik� rotini, p�nn� or farfall�
  • salt and p�pp�r to tast�
  • 1 cup shr�dd�d Ch�ddar-Jack ch��s�
  • 1/3 cup slic�d scallions for garnish
INSTRUCTIONS
  1. Add oliv� oil to a 5 quart saut� pan ov�r m�dium high h�at. Add onions and sausag� and cook until lightly brown�d. Add garlic and cook for about 30 s�conds.
  2. Add chick�n broth, tomato�s (undrain�d), milk, pasta, and s�asonings. Bring th� mixtur� to a boil, cov�r, and r�duc� h�at to low. Simm�r for about 15 minut�s, or until pasta is t�nd�r and most of th� liquid is absorb�d.
  3. Turn off th� h�at and stir in 1/2 cup of ch��s�. Sprinkl� r�maining ch��s� on top and cov�r for about fiv� minut�s to allow ch��s� to m�lt. Top with slic�d scallions and s�rv�. (You could also broil for a coupl� of minut�s to m�lt th� ch��s�).
